| Millennium Flapjacks | |
| 100 grams Margarine 75 grams Dark Brown Sugar 75 grams Golden Syrup 150 grams Mincemeat 25 millilitre Brandy or Rum 200 grams Rolled Oats |

|
Place margarine, sugar and golden syrup into container and melt. This can either be done in plastic container suitable for microwave or a saucepan using a low heat - do not boil. Add mincemeat to warm mixture and stir in brandy or rum. Place oats into mixing bowl, add warm mixture and stir thoroughly until all dry oats are mixed in. Put flapjack mixture into shallow lined* container, approx. 20cm by 15cm and place into medium hot oven (170 degree C) or equivalent for 15 minutes, turn round and cook for a further 15 minutes or until the top shows a golden brown colour. Leave to cool in container before removing, to cut into suitable sized portions. The flapjacks keep well in plastic cake container, provided they get there !!!!!! N.B. The flapjacks should be similar to a toffee texture. * Recommend use of Bakewell baking paper. © Chris Boatfield Totland Isle of Wight - This recipe is for personal use only and may not be published without permission from Chris Boatfield. |
